It's a thick, rather heavy pancake - a bit like a crumpet made of steel. The joke goes that, since the people of upstate New York traditionally use iron-fortified red wheat flour to make them, they actually have some kind of measurable metal content, are magnetic, you climb them more than eat them, and so on.
